Tips for clean cut-outs

Roll the dough out evenly so that all the ladybirds are the same thickness. Dip the cutter briefly in flour or icing sugar, press it straight down into the dough with even pressure and carefully lift out the pieces. If the dough sticks, chill it briefly beforehand. Roll fondant and marzipan out thinly on a dusted surface. With salt dough and modelling clay, it helps to moisten the cutter slightly or dust it with powder.
