Opinel No. 07 chestnut knife – short blade for chestnuts, garlic and stone fruit
The Opinel No. 07 is a small folding knife for the kitchen: with its short, pointed blade you can score chestnuts, peel garlic cloves and remove the stones from fruit such as plums, apricots or cherries. That comes in handy when you are preparing jam or cake.
The blade is 4 cm long, made of stainless steel and shaped like a bird's beak. A short blade is easier to control than a long one. The handle is made of chestnut wood. The Virobloc safety ring locks the blade so that it does not move unintentionally while you work.
Using the chestnut knife
Place the chestnut on a board with the rounded side facing up and score the shell with the tip of the blade, without cutting deep into the flesh. The cut lets steam escape when roasting or boiling, and the shell is easier to remove afterwards. For garlic, cut off the root end and loosen the skin with the tip. To stone fruit, make a cut along the fruit and twist the stone out.
Working safely
Lock the blade with the Virobloc ring as soon as it is open, and only release the ring when you want to close the knife. Do not hold the food in your free hand against the blade; work on a board instead.
