Victorinox Swiss Modern Chef's Knife 20 cm – extra-wide carving blade

The Victorinox Swiss Modern chef's knife (art. no. 6.9016.202B) has a 20 cm extra-wide blade made of stainless, wear-resistant steel. You can use it to carve and slice meat, fruit and vegetables. Victorinox gives pork shoulder, aubergine and watermelon as examples. On the manufacturer's website the knife is listed as a carving knife.

The Cornflower Blue handle is made of polypropylene copolymer (PPC). The blade is not forged and has a standard straight edge. The knife is made in Switzerland and is dishwasher safe according to Victorinox. The manufacturer also states a lifetime guarantee.

Using the chef's knife

The wide blade suits larger pieces: when carving, draw the knife through the meat in long, steady strokes rather than sawing or pressing. Because the blade is so wide, you have more surface to guide when cutting fruit and vegetables, for example a watermelon or an aubergine. Cut on a wooden or plastic board, not on stone, glass or ceramic. This keeps the edge sharp for longer. Store the knife with a blade guard or in a knife block so that nobody can grab the sharp blade by mistake.

Swiss Modern knives come with different blade lengths. This knife, with a 20 cm extra-wide blade, is intended for meat, fruit and vegetables. Victorinox gives the 22 cm version for larger roasts and cuts of meat, such as roast beef. The 15 cm knife is a slim paring knife for cutting, peeling and coring.
